Vietnamese Chicken Sandwiches

Ingredients

  • 1 rotisserie chicken, skin removed and shredded
  • 1 large carrot, julienned
  • 1 red pepper, halved and thinly sliced
  • 1/2 cucumber, halved, seeded and thinly sliced
  • 1/2 cup mandarin ginger vinaigrette 125 mL
  • 2 cups romaine salad blend, roughly chopped 500 mL
  • 6 8-inch (20 cm) soft bread rolls
  • 1/2 cup fresh coriander washed and dried 125 mL

Directions

  • Step 1

    Combine chicken, carrot, red pepper and cucumber. Toss with vinaigrette and salt and pepper to taste.

  • Step 2

    Divide lettuce and chicken mixture between each roll. Garnish with coriander, if using.
