Hearty Sausage, Kale & Bean Stew

Ingredients

  • 1 tsp olive oil 5 mL
  • 1 lb mild Italian sausages 500 g
  • 1 onion, finely chopped
  • 1 container Sensations by Compliments Homestyle Chicken Noodle Soup 625 mL
  • ½ cup water
  • 1 can no sodium cannellini beans, drained and rinsed 15 oz
  • 2 cups ½ bunch kale, tough stems discarded, leaves chopped into bite-size pieces 500 mL

Directions

  • Step 1

    In a skillet set over medium-high heat, cook the sausages in the oil, about 10 min., or until browned on all sides and cooked through. Remove from skillet and set aside on a plate.

  • Step 2

    In same skillet, cook onion over medium heat until translucent. Stir in Homestyle Chicken Noodle Soup, add water; bring to a boil then reduce to a simmer.

  • Step 3

    Meanwhile, thinly slice the sausages. Add to soup mixture, along with the beans and kale. Simmer 5 to 10 min., stirring occasionally, or until kale is tender.
