Grilled Guacamole

  • Makes:1 3/4 cup (425 mL)

Ingredients

  • 1/4 cup finely diced red onion 60 mL
  • 1/4 tsp salt 1 mL
  • 2 tbsp lime juice 30 mL
  • 1 tsp Roasted Garlic Seasoning Paste 5 mL
  • 2 avocados, ripe but firm, peeled, pitted and quartered 0
  • 1/3 cup finely diced SUNSET® CampariTM Tomatoes 75 mL
  • 2 tbsp finely chopped fresh Cilantro 30 mL
  • 1/2 tsp hot sauce 2 mL

Directions

  • Step 1

    Preheat barbecue to high. In a bowl, mix together onion, salt, lime juice and roasted garlic paste. Set aside.

  • Step 2

    Grill avocado 1 to 2 min. per side. Remove from barbecue, roughly chop and add to red onion mixture. Mix in tomatoes, cilantro and hot sauce. Serve with tortilla chips.

Tip

To prevent this fruit from slipping through the barbecue grates, quarter or halve the avocado and grill flesh side down.
