Beer Batter Apple Fritters

Ingredients

  • 2 cups cake flour 500 mL
  • 1 cup cornmeal 250 mL
  • 1/4 cup sugar 60 mL
  • 1 tbsp baking powder 15 mL
  • 1 tbsp Ground Cinnamon 15 mL
  • 1/8 tsp salt 0.5 mL
  • 1 cup de-alcoholized beer 250 mL
  • 3 eggs 0
  • 1/4 cup melted butter 60 mL
  • 1 orange, zested and juiced 0
  • 1 tsp Pure Vanilla Extract 5 mL
  • 3 Cortland Apples, diced 0
  • 0 Canola oil for deep-frying 0
  • 0 Icing sugar for dusting 0

Directions

  • Step 1

    In a large bowl, sift together the flour, cornmeal, sugar, baking powder, cinnamon and salt. Set aside. In another bowl, whisk together beer, eggs, butter, 1 tbsp (15 mL) orange zest, 3 tbsp (45 mL) orange juice and vanilla. Stir wet ingredients into dry ingredients until just moistened. Fold in apples.

  • Step 2

    Heat a large saucepan filled with 2-in. of oil over medium-high heat until an instant read thermometer reads 375°F (190°C). Working in batches, carefully drop heaping tablespoons of batter into hot oil and fry until golden brown, about 2 min. per side. Using tongs, carefully remove fritters from oil and place on a paper towel–lined plate. Dust with icing sugar and serve warm with French Vanilla Ice Cream.

Tip

Crisp apples, like Cortlands, work best for this recipe.
